This is an easy BBQ recipe for something different on the grill, it's a healthy alternative to traditional bbq food. I often make it instead of meat on the grill for vegetarian friends. I learned to make extra because even the non-veggie friends love it and choose this over traditional burgers
Adults: Fire up the grill to get it ready
Wash and slice one large eggplant (about 1/4 inch thick each)
Kids: Put Italian Dressing in bowl and add the garlic, oregano.
Kids: Put the eggplant in the bowl and let it sit for 10 minutes
Adults: Check the grill and when it's ready
Adults: Grill eggplant on the grill for about 10 minutes-flipping once at 5 minutes. (Be sure to watch to see how fast it is cooking, when it is browning nicely it is done.)
Adults: Next add the sliced tomato on each piece of eggplant.
Adults: Sprinkle Mozzarella and Parmesan cheese. Cook until the cheese slightly melts
Adults: Carefully use a grill safe spatula to remove the eggplant slices.
Together: Put the eggplant on the buns or sliced italian bread add the top piece and press firmly.
